Vegetarian Slimming World | Sweet Potato & Spinach Curry

A delicious, filling and healthy Vegetarian Slimming world friendly meal. You could swop the sweet potatoes for butternut squash if you liked or use half and half.

Sweet Potato & Spinach Curry
A delicious vegetarian curry. Free on Green, Free on Extra Easy

  1. 750g Sweet Potatoes
  2. 250g Fresh Baby Leaf Spinach
  3. 1 Red Onion finely chopped
  4. 2 Garlic Cloves crushed
  5. 1 Red chilli, deseeded and thinly sliced
  6. 300 ml Vegetable Stock
  7. 1tbs Curry Powder
  8. 400g Passata
  9. Fry Light Spray Oil
  1. Place the onion in a pan with a spray or two of Fry Light and gently fry for a 2 or 3 minutes.
  2. Add the garlic and stir for a further couple of minutes before adding the curry powder.
  3. Stir and cook for 2 minutes before adding the sweet potatoes and vegetable stock.
  4. After 5 minutes, add the spinach, red chilli and passata and cook over a medium heat for 10 minutes or until the sweet potatoes are soft.
  5. Season and serve

    1. Sorry! It totally depends on your appetite and how much rice etc that you’re going to eat with it ( I prefer to eat this on it’s own but I imagine that some will serve with rice) and so I’d say 2 adults or a family of 4. Sorry if my guestimate doesn’t fit your needs!
