Roast Vegetables with Squash and Sweet Potato

One of my favourite meal accompaniments
Ingredients
- 1/3 of a small butter nut squash
- 1/3 large sweet potato
- 1/2 red onion
- 1/3 aubergine
- 1/2 courgette
- 1 red pepper
- 8 cherry tomatoes
- 1 garlic clove
- Peri peri spice mix or herbs if required
Instructions
- Cut the squash and sweet potato into bite size pieces
- Quarter the red onion and don't separate into pieces
- roughly chop all the other veg into pieces larger than the potato and squash as they will cook quicker been less dense.
- Leave the tomatoes whole
- Peel the garlic clove
- Preheat an oven to 200 degrees.
- Spray a large baking tray with spray light and put in the oven to heat for 5 mins.
- Throw all the vegetables and potato onto the tray, spray again with spray light and sprinkle with herbs or spices if desired.
- Cook in the oven for up to half an hour, turning the vegetables once or twice.
- When cooked, squash the garlic with a fork and mix through the vegetables.
- Serve
