Roast Vegetables with Squash and Sweet Potato
One of my favourite meal accompaniments

  1. 1/3 of a small butter nut squash
  2. 1/3 large sweet potato
  3. 1/2 red onion
  4. 1/3 aubergine
  5. 1/2 courgette
  6. 1 red pepper
  7. 8 cherry tomatoes
  8. 1 garlic clove
  9. Peri peri spice mix or herbs if required
  1. Cut the squash and sweet potato into bite size pieces
  2. Quarter the red onion and don't separate into pieces
  3. roughly chop all the other veg into pieces larger than the potato and squash as they will cook quicker been less dense.
  4. Leave the tomatoes whole
  5. Peel the garlic clove
  6. Preheat an oven to 200 degrees.
  7. Spray a large baking tray with spray light and put in the oven to heat for 5 mins.
  8. Throw all the vegetables and potato onto the tray, spray again with spray light and sprinkle with herbs or spices if desired.
  9. Cook in the oven for up to half an hour, turning the vegetables once or twice.
  10. When cooked, squash the garlic with a fork and mix through the vegetables.
  11. Serve

  1. Your side dish recipe sounds lush – I will have to try this with maybe a fillet of salmon… Yum! x
